What is Super Juice?
Super Juice is a technique from the cocktail industry that involves extracting flavor-packed oils from citrus peels (via a blender or oleo citrate). These citrus oils are mixed with a blend of water and acids (e.g., citric) to approximate the acidity of fresh squeezed juice. This blend is then combined with the juice and used in place of conventional citrus in cocktail (and other) recipes.
What are the advantages over conventional citrus?
1) Because it uses the entire fruit, super juice is more sustainable than conventional juice production that simply discards hulls - where most of the flavor resides!
2) Bartenders appreciate Super Juice's consistency, and enhanced shelf life - conventional citrus starts going bad after about eight hours.
3) Many people prefer the taste of Super Juice over conventional in blind tests - and even more so with Citrus Bunny “Ultra Juice.”
What makes Citrus Bunny better than other Super Juice formulations?
A critique of first-gen Super Juice formulations was that they lacked the complexity of conventional juice - as most versions used a simple recipe of peels plus one or two acids. Citrus Bunny solves this issue by enhancing our Super Juice mix with a blend of four acids and seven organic botanicals to enhance flavor complexity (Ultra Juice?).
What botanicals do you use?
We use different botanical mixes depending on the citrus, but key players include: cardamom, juniper berry, coriander, lemon verbena, lemon myrtle, kafir lime leaf, ginger, orange peel, and chamomile.
How does it work?
Basically you peel 3 (lemons) or 4 (limes) and then put the peels, Citrus Bunny mix, 650(ish) ml of water, and the juice from the fruit into a blender. Blend for 30-40 seconds and then strain off the zest. Alternatively, with our no-peel OJ to Lime, just mix shake and strain.
